What’s served when you’re on the go? This is a question that, as the survey by MAN and Fahren for Deutschland (Driving for Germany) has shown, does not leave many of you cold. And often raises a logistical issue: how do you get good and healthy food that has been freshly prepared to the driver’s table without it costing a lot? Ingmar and Daniel will show you how with MAN Road Meal.

Cooking for yourself while on the go can be a solution that we would like to tempt you with as part of the MAN Road Meal series. Chef Daniel from MAN Catering meets professional driver Ingmar live at the service station kitchen to do exactly that. Together, the pair prepare good meals in a few simple steps and do so using a handful of fresh ingredients intended to help make the driver’s everyday life healthier when it comes to nutrition.

Asian stir-fried vegetables recipe

Depending on what’s on offer at the local vegetable stall or in your backpack, diced or striped peppers, fresh lemongrass, sugar beans or broccoli can be added to the dish as desired. 

The amount of glass noodles can also be adjusted to your personal taste, depending on whether you prefer to eat your Thai curry pot with more vegetables or noodles. It tastes delicious in both ways.

Ingredients

  • 1–2 carrots
  • Approx. 4 mushrooms
  • 1–2 tablespoons red curry paste
  • A little ginger
  • 1–2 spring onions
  • Glass noodles
  • 1 small courgette
  • 1 spoon vegetable stock
  • 1 glass of water
  • A little oil
  • A little soy sauce

Preparation

  • Cut the vegetables into small pieces
  • Fry the vegetable mix in the pan with a little oil
  • If available: deglaze with a dash of soy sauce
  • Add 1–2 tablespoons of red curry paste and stir
  • Season to taste (e.g. with fine slices of chilli)
  • Add 1 spoonful of vegetable stock
  • Add water depending on the amount of pasta (about 200 ml)
  • Add glass noodles
  • Bring to the boil for 3–4 minutes
  • Serve with a little coriander if needed and eat hot!
